EL SALVADOR — FINCA LAS MERCEDES
Sweet • Floral • Exceptionally Complex
Grown at Finca Las Mercedes, a five-generation family farm established in 1886 near Santiago de María, this remarkable coffee comes from the slopes surrounding Cerro El Tigre in El Salvador’s Tecapa region.
The farm has earned international recognition, including first place and a Presidential Award at the 2006 El Salvador Cup of Excellence.
This coffee demanded something special from us. After extensive roast testing, we found its sweet spot at a Medium–Full City roast, where its delicate floral aromatics remain beautifully intact while caramel, honey, and chocolate develop in the cup. Citrus brightness and raspberry-like acidity complement its juicy medium body and clean, lingering finish.
After more than 30 years of roasting coffee, we consider this one of the finest coffees we’ve had the pleasure of roasting and offering to our customers. Our confidence in it led us to make the 2026 crop the largest single coffee purchase in our company’s history.

HONEY PROCESS
After the ripe cherries are depulped, some of their naturally sweet, sticky mucilage remains around the parchment during drying. The coffee is dried first on patios and then on raised beds, helping create a cup that is sweeter and rounder than a washed coffee while remaining cleaner and less fruit-forward than a natural process.

I’m hooked. I’ve had a lot of different small craft roasters coffee and this by far is the best I’ve ever had. Every time I order, It’s at my doorstep within two days. Never disappoints!
Thank you for the great review. We appreciate you!
After my first review, Cliff sent me a newly roasted (on 9/21) 12oz bag. Opening the bag, I was delighted that the beans were roasted lighter than my first bag, and I already knew I was going to enjoy this batch better. The sweetness showed better, yet balanced with some brightness. At the moment, I'm liking it brewed with a V60 (4:6 pouring method, for 20g coffee you'll end up using 300g water), coarse grind (almost FP coarse), at 195F. It's been a very delicious brew these last few mornings. Thank you, again, Cliff! I'm visiting the Palm Springs area in November, and would like to stop by if time permits.
I received my 12 oz bag as gift (roast date 8/31/22). I typically like my coffees at light to medium roast level, and upon opening the bag saw that this was more of a medium-dark roast. Okay...no problem. I brewed with a V60 (basic J Hoffmann method), using the suggested medium grind, dosage and brewing temperature provided by the roaster(55g/L or 5.5g/100ml, @ 200F). I didn't like what ended up my cup. I thought it was too roasty (not burnt, but felt the roast masked the other characteristics of the bean). I brewed another batch, same grind, same dosage, but at 193F. And, I enjoyed it much better. The nutty and floral notes showed better. Couldn't pick up the dried fruit notes mentioned on the flavor profile, but that's okay. It drank a lot smoother at 193F, for me. Nice and enjoyable coffee once I dialed in the brew! I would probably enjoy it more at a lighter roast level, like a medium.
